Whole Wheat Cranberry Bread (a favorite of our guests……)
*as this recipe is written, it makes 16-20 12oz loaves; if a regular bread pan is used, you can expect this recipe to yield approximately 10-12 loaves.
What you’ll need:
- ½ cup Yeast
- 3T Salt
- 3 cups oats
- 1 cup Wheat Germ
- 1 cup oil
- 1 cup honey
- 1 cup molasses
- 7 cups warm water
- 4 cups wheat flour
- Hi-Gluten bread flour as needed (approx 8 cups)
- 4 cups cranberries
Here’s what you’ll do:
- Mix the yeast with the warm water and let it set until dissolved
- Mix salt, oats, wheat germ, wheat flour and an equal amount of bread flour together
- Add flour mix to water
- Add cranberries, oil, honey and molasses
- Knead until dough is elastic, adding more bread flour as needed
- Cover and let dough rise until doubled in size
- Form into 12oz portions and allow to rise again
- Bake at 325 (convection) or 375 (conventional) for approximately 20-30 minutes
- Glaze with honey butter
